The owner of Local Kitchen & Beer Bar (coming soon) is looking for a food operating partner at 88 West Chippewa. Owner Justin Anderson tells me that he is looking for a collaborator that will bring a “different” food concept to the street – something that will mesh with his craft beer and bourbon concept.
According to Anderson, depending on the partnership arrangement, he is willing to build out the kitchen to accommodate the food concept. “I am looking for someone to come in and run the kitchen side of business,” says Anderson. “I prefer that it would be someone who currently owns a business or a chef that wants to demonstrate local Buffalo flair with their food. Details of said partnership will be on a case by case discussion depending on experience and what’s brought to the table.”
Anderson also wants to hear about what sort of cuisine BRO readers want to see on Chippewa. Personally, I always felt that the first city pub to feature a carving station behind the bar would kill it. Fresh carved sandwiches and a locally brewed craft beer? Now that sounds like a winning combination for the street. An authentic Jewish deli would also be a big hit.
