This evening is the soft opening of Martin Cooks in the Horsefeathers Market building. The interior of the eatery has come a long way since we last paid a visit to the operation, and some of the food that I’ve had a chance to sample is out of this world.
I stopped in last night to talk to owner Martin Danilowicz about the unusual (for Buffalo) dinner concept (lunch is next). Not only will the dinner concept be fresh in more ways than one, the truly open kitchen-meets-dining environment is taken to an entirely different level. Working with developer Karl Frizlen, the integrity of the building has been left intact in order to showcase the bones of the space. From wall wine rack systems developed at The Foundry (Rusted Grain) to a custom made bar, to workspaces that resemble what you might see at an old world market stall, the welcome vibe and the openness of the restaurant is inspiring. Not to mention the food that I sampled was nothing short of spectacular.
In order to give me a taste of what diners will come to experience, Martin cooked up a couple of small plates for me to try. First up was the carrot ginger soup with miso caramel crostini, and pickled red and yellow beats and carrots, topped with black sesame seeds. The combination of the textures and tastes was exceptional, not to mention the colorful array of the items. Next came the sweet tea, coconut and mint puree, with seared shrimp and tempura shiso. Once again, the mix of flavors and the presentation was thoughtfully executed. These are just two mouth-watering examples of what diners will be treated to during a six course meal this week (for $50). Each dish that I sampled was better than the next, and by the end of the sampling, I had a real grasp of Martin’s cooking style and the routine that dinner guests will be treated to in days to come.
Dinner slots are still available for Friday and Saturday nights this week. Full bar service – drinks not included in prefix menu.
