Chef Chris Silverstein, owner of the Lagniappes French Quarter Cafe on Allen Street is looking to get into the food truck business. I spoke to Chris yesterday about his decision to get his restaurant on the road, and he told me that the ability to create a four wheel enterprise is just too tempting. He also alluded that he was looking at two completely different scenarios that he would like to roll out. Intrigued, I asked him to send along images that would represent the two directions that he was looking to go.
When Chris showed me the two different trucks that he was eyeing, I immediately got excited about the prospects of either one of them becoming a reality. “I have a permanent location for the truck during Spring, Summer and early Fall,” Chris said. “With operating hours of 9am to 10pm…. and then she will be roaming in the colder months. The way I look at it, if you’re going to do something it’s got to be different and unique… you have got to stand out from the others. I would love to get Buffalo Rising readers involved with voting on the truck that they would like to see.”
Along with funds that Chris has already raised, he has also launched a Kickstarter campaign in order to expedite the financial undertaking. The suggestion to go the Kickstarter route came from encouragement from his customers – and those are the people who will ultimately benefit from having a completely different food truck out on the road, and positioned in a place (yet to be announced) that could really use some good food.
